DoubleTree by Hilton hosts highlight of the year in Kuala Lumpur

The highlight of the Bailliage’s year – the annual national Chapitre – was held at the DoubleTree by Hilton Kuala Lumpur with the theme “From the 1920s to the Millennium”.

In attendance at the spectacular ‘black tie’ dinner were 116 members and guests. The ladies were in their most glamorous outfits matched with colourful fascinators and ornate jewellery. Due to the overwhelming response, unfortunately many members were disappointed that it was a sell out!

The hotel had pulled out all the stops to bring the theme of the event to life. Guests were wowed with a wondrous 1920s era scene resplendent with dazzling strands of white pearls, ethereal white orchids and peach roses placed on the tables decked in black linen and silver bows.

In his capacity as a Member of the Conseil Magistral, our own Bailli Délégué, Datuk Dr J S Sambhi, had been appointed by President Atallah to be the Inducting Officer. During the Ceremony thirty three members received their Chaîne regalia as new members or having been promoted.

Datuk Dr Sambhi then presented an eulogy on the late Chancelier, Marco Giovanni Battistotti, who had passed away on August 8, 2015, on the North-South Highway whilst  returning from a Chaîne dinner in Melaka. ‘La donna è mobile’ as sung by Luciano Pavarotti was played after the eulogy. Everyone sat in silence for a moment whilst remembering Marco. A toast followed to his memory.

At the pre-dinner reception hors d’oeuvres were superbly paired with Torres Viña Esmeralda. The catering could not have started off any better than this!

The feature of the dinner was the slow-roasted Sher Wagyu beef sirloin, accompanied by porcini with foie gras arancini, glazed market vegetables, rosemary polenta cake and natural jus. This course was perfectly paired with Speri Amarone della Valpolicella DOCG from Italy.

To end the wonderful menu, dessert was a rich Valrhona Manjari (64%) dark chocolate mousse with yuzu pearls, raspberry meringue, coconut-lime sable crumbles and yogurt vanilla ice cream. What a kaleidoscope of colours it presented!

Before the honouring the kitchen and service brigades, the Kuala Lumpur Convention Centre was presented with the Dato Lau Foo Sun Excellence in Dining award for 2015. [Ed. See separate article in the À Savoir section of the Chaîne News On-line website]

The evening concluded with the presentation of a Commemorative Plaque and well-deserved Certificates of Appreciation to the banquet, kitchen and service brigades led by General Manager Jean-Sebastien Kling, the dynamic Executive Chef Eric Siew and Sommelier Ronald Binati.
