As its own way of joining in the local Hari Raya (Eid) holiday celebrations, the Bailliage held a dinner at the Radisson Hotel in Brunei’s capital, Bandar Seri Begawan.

Among those attending, as new members of the Bailliage, were the Ambassador for France, His Excellency Christian Ramage, and his wife, Brigitte.

In preparation for the event, Bailli Délégué Andrew Caie and Conseiller Gastronomique Nicoline van den Berg-Alma challenged Chef Devesh and the hotel’s kitchen brigade to come up with a novel menu.

They told them that they were looking for a balanced mix of local and imported ingredients together with some imaginative blending of flavours and elegant presentation. The brigade perfectly interpreted the specifications, accordingly members and guests attending the event were in for a real treat.

All at The Radisson did a great job thus ensuring the success of the event.

It is difficult to single out particular dishes in what was a consistently high standard menu. However, I’m going to mention the excellent flavour, presentation and serving of the charred bell pepper soup and the perfect combination of apple and lemongrass in the sorbet.
