Autumn themed pairing event at La Sidrería Teitu
" each dish was accompanied with a specially-chosen wine "
The Bailliage’s Ordre Mondial group held a wine-pairing dinner at La Sidrería Teitu which belongs to the Oter Group with its Chaîne members Argentier Gerardo Oter and Maître Rôtisseur Jesús Martínez.
Teitu is an authentic Asturian cider house in the heart of Madrid. A few metres from the Paseo de la Castellana, the restaurant prides itself on sourcing old recipes from the north of Spain to enable its guests to revisit the true flavours of Asturian cuisine.
The event was a sell out with 40 members and guests attending. In her words of welcome, Bailli Délégué Rosa Román thanked all present. She gave a brief review of the different professional profiles present, from experts in gastronomic communication to journalists, photographers, professionals of catering, lawyers, professionals from the world of wine. Her clear objective was to demonstrate the wealth of members that makes the Chaîne so fascinating.
Rosa also made special reference to the presence of Pablo Bravo, formerly Ambassador of Spain in Saudi Arabia, and Javier García-Bernal, Honorary Consul of Costa Rica.
After the welcome we prepared to enjoy a high quality dinner. The menu selected for the occasion was the following:
RECEPTION
Beef jerky (lightly smoked)
Assorted artisan croquettes
Mi-cuit foie gras
Vermú Petroni Red and White
MENU
Ceviche of corvina in lime juice
Essentium Albariño
Pedrero octopus
artichoke in Galician ajada
Alidis Crianza 2014
Cod in cider sauce
Alidis Reserva 2011
Beef stew with truffles
Alidis Expresión 2011
Cheesecake and reduction of red fruits
Moscatel Casta Diva
We enjoyed a wonderful dinner, where each dish was accompanied with a specially-chosen wine.
Much appreciation was expressed to:
- the Alidis Viña Mambrilla winery and its manager, Rodrigo Arranz, for the wines and for giving us the tasting note of each wine with each dish.
- Ignacio Bueno, Commercial Director of Alidis, for his help in the organization of the event.
- Vermutería St. Petroni for the red and white vermouth served as the aperitif and particularly to Raquel Fernández for her support. The tasting notes of vermouth were given to us by Jesús Flores, famous winemaker and sommelier.
At the end of the dinner, a Bailliage certificate of appreciation was presented to Head Chef José Jáñez as well as to Maître d’hôtel Sergio Cabornero for their dedication and the effort and commitment made in making this dinner a special event. To acknowledge the high standards achieved, Gerardo Oter received the Chaîne Professionals plaque for the establishment.
Thanks to the generous donations by Alidis and Vermutería St. Petroni, there was a raffle of a magnum of Alidis and a gift pack of two bottles of Vermú. Naturally, both prizes delighted the holders of the winning tickets.
We also want to thank Carolina Velasco and Javier Guilarte, both members of the Bailliage of Venezuela, who decided to join our dinner during their stay in Madrid.
And last but not least thanks also to Enrique Domínguez and all those who contributed photos for the purposes of this article.
Vive la Chaîne!
