The Chaîne brought flavours of ancient South American cultures from the mountains of Peru to the clouded hills of Chongqing at one of the city’s top dining experiences of 2018.
Led by Peruvian celebrity Chef Eduardo Vargas, creator of leading Shanghai dining venues Azul Tapas Lounge and Colca, the event featured an eight-course culinary journey through Peru’s unique blend of native South American culture and Spanish colonial influence.
In a ceremony that recalled the ancient European origins of the Chaîne, in his capacity as a Member of the Conseil d’Administration, Bailli Délégué Allen Wong dubbed new inductees into our association by sword as is the tradition.
There followed a glittering black tie celebration in the Grand Ballroom of the Westin Chongqing Liberation Square Hotel where the best of world cuisine was complemented by live modern jazz.
The experience began with a champagne reception featuring traditional Peruvian elements adapted in the amuse bouche such as plantain and suckling pig with a modern twist.
The dinner itself featured Peruvian-influenced delicacies.

The Chaîne’s mission is to bring together like-minded gourmets from any background in an atmosphere of conviviality and comradeship. In Chongqing, the true spirit of our association was much in evidence as the Chapitre brought the city a truly unique ceremonial celebration of food, wine, and international friendship.
