Maltese chef creates an outstanding menu
" lively cuisine that mirrored characteristics of Maltese life "

The Bailliage was hosted at the residence of the Ambassador of Malta, His Excellency Patrick Cole (who is a Chevalier d’Honneur) and his lovely wife Jo.

Malta, the beautiful historic island located in midst of the Mediterranean, has been influenced by many cultures, Roman, Arab, British, French, Knights of Saint John. Dating back to around 4000 B.C over the years it has combined the best from many of these cultural inspirations. The island’s cuisine which developed over the centuries goes especially well with Malta’s local resources.

The Symphony Style Hotel’s Maltese Chef Jonathan created an outstanding Maltese menu. We tasted new creations of authentic dishes with the presentation adding to the visual delights.

Mediterranean scented sea treasures
green pea vinaigrette, Jerusalem artichoke cream
squid ink jelly

Traditional widow soup
seven vegetables, poached quail egg, homemade goat’s cheese

Blood orange sorbet
perfected by its own skin marmalade

Duet of seared Barbary duck breast and confit leg croquettes
potato fondant, foie gras espuma, red orange Maltese sauce

Maltese traditional treats
milk parfait, baked almond cake
imqaret (diamond-shaped date-filled pastries)
aniseed foam, prickly pear ice cream

Coffee with homemade petits fours

We all very much enjoyed this lively cuisine that mirrored characteristics of Maltese life.
