Resounding delight of fellowship and culinary fare!
" The Chaîne is unique for altruistic synergies with Professional and Non-professional "

Bailliage members were treated to a spectacular black-tie Gala extravaganza of remarkable cuisine and wines at the opulent Ritz-Carlton Kuala Lumpur on a warm Malaysian Saturday evening in late October.

Paul Wyss, Member of the Conseil Magistral, came especially from Taiwan to be Inducting Officer at this highlight event of the National Bailliage’s year. He was certainly kept busy inducting and promoting a record number of thirty-three members!

In addition, thirty-eight long-standing members were bestowed with the new ‘Silver Commandeur’ for their ten years of continuous Chaîne affiliation. Dato Leong Yoke Faie was honoured with his ‘Commandeur’ badge for twenty years of dedicated service, whilst Yap Han Boon was awarded the title ‘Officier Commandeur’ thus joining the elite group of only three other distinguished Malaysians with more than 30 years membership!

The Chaîne is unique for altruistic synergies with Professional and Non-professional, as exemplified with the Jeunes Chefs Rôtisseurs Competition. The 2018 national winner was a young maestro, Patrick Lim of DC Kitchen, who accepted a grand prize and cheque. Congratulations from all in the Bailliage of Malaysia!

At the reception 131 members and guests were lavished with eclectic canapes (Lobster Bellini, Parmesan mushroom risotto, beef carpaccio) and effervescent Canard-Duchêne Champagne.

Amongst esteemed guests were the Bailli Honoraire of Jakarta, neighbours from the Bailliage of Singapore, the Baillis of Kuala Lumpur, Melaka, Putrajaya, Sabah, Sarawak, and Chaîne members from all over west and east Malaysia!

A special presentation initiated the proceedings in the form of the annual ‘Dato Lau Foo Sun Excellence in Dining’ award, named in honour of the late founder of the Bailliage of Malaysia. This coveted accolade is awarded to the establishment deemed by the members as having delivered the optimal dining experience amongst the year’s Chaîne dinners. The worthy winner was Hyatt Regency Kinabalu whilst the runner-up was Kuching Hilton, reflecting the refined standard of fare that is being produced in Borneo!

The banquet proper, a fusion complement of the Americas and Asia, commenced with a unique hamachi and palm hearts paired with Bonpas Côte de Luberon Blanc, followed by a stimulating octopus causa and thence a sublime butternut squash soup with foie gras and wild mushroom crostini, both washed down with chilled Allan Scott Family Estate Marlborough Sauvignon Blanc from New Zealand.

As in interlude, taste buds were certainly roused with the distinctive avocado lime sorbet! Gourmands were enticed with Skuna Bay salmon and tomato saffron broth, coupled with a rather refreshing Roustabout Pemberton Chardonnay, and Wagyu beef melded with coconut, kefir lime and achiote, accompanied by a superlative Dandelion Vineyards’ Pride of the Fleurieu Peninsula Cabernet Sauvignon.

The delectable dessert, a flawless permutation of crispy strawberry-fusion mango emulsion, caramel foam, basil sorbet, was married with a perfectly splendid Roustabout Late Harvest Verdleho.

To round off this invigorating feast, diners revelled to the clinking of crystal goblets and iced after-dinner tipples of aged Cognac and single malt Whisky.

This enticing Gala Induction evening will long remain in our memories, particularly due to the warm camaraderie amongst the members and their guests throughout the evening, the sounds of laughter and jovial discourse resonating throughout the Ballroom adding to the grandeur of such a wonderful gastronomic occasion.

Our grateful thanks went to Wilfred Wong, Frankie Lee and the exceptional team at the Ritz-Carlton Kuala Lumpur, not forgetting Masters of Ceremonies - the tireless Ming Ho and the ubiquitous Dr S - all of whom contributed to the unforgettable event being such a resounding delight of fellowship and culinary fare!
