Excellent fish at the Restaurant Marée
" Each highlight was followed by another even more special "

This year’s fish meal organised by the National Bailliage took place in the Restaurant Marée of Sonnenhof Hotel.

There were two very particular reasons to enjoy the occasion. On the one hand, it was the first Chaîne Liechtenstein event held at the newly-renovated restaurant. On the other hand the nomination of Chef/Owner Hubertus Real to the grade of Grand Officier Maître Rôtisseur was announced.

His formal admission to the highest rank of Chaîne Professional members will take place on the occasion of the Grand Chapitre in August.

Together with his team, Hubertus Real demonstrated that the promotion was amply justified. Over the course of several hours, we were served a very special feast.

Here is a small selection of the presented courses.

- Carpaccio of sea bass and wild salmon, sea buckthorn, mandarin

- Gently-cooked pike-perch, Japanese soya vegetables, coriander pesto

- Paella à la Sonnenhof, langoustine, calamari, mussels

- Crispy grilled stone bass, beetroot stew, foamed wasabi, butter potatoes

Each highlight was followed by another even more special and it proved difficult for the members and their guests to identify a clear favourite amongst the dishes.

When Hubertus Real and his team entered the dining room, the applause was correspondingly enthusiastic.
