Bailliage of Wessex tours Chaîne establishments

The local Bailliage of Wessex in southern England was founded in 2006. In keeping with the traditions of the Chaîne its aims are to have fun, enjoy fine dining with good friends and take advantage of the international reach of the Chaîne.

Through these activities this Bailliage extends its friendships by visiting other National Bailliages, especially in Europe. This year, at the end of June, some 40 members and their guests toured Austria. During their stay the group visited numerous Chaîne hotels and restaurants.

For the last dinner of the visit, Janet Evins, Bailli of Wessex, invited members of the National Bailliage of Austria to join her group on July 1st at the Hotel Imperial in Vienna.

This invitation was taken up by many Austrian members. In conversation with their English counterparts their impression, from the amicable and informative exchanges, was that the visitors had had a lot of fun during the "excursion" through Austria. In particular they had a very positive impression of the country and its people.

After an aperitif in the Marmorsaal, the excellently-prepared menu was presented by Maître Rôtisseur Rupert Schnait in the Festsaal.

MENU

Breton lobster, green asparagus, citrus fruit

Iced tomato consommé, goat cheese tart

Salmon trout, celery, fennel, saffron

Austria dry-aged beef, chanterelle, potatoes, carrots

Caramelized Opalys, currant, balsamic, bergamot

In addition, there was, of course, a suitable wine accompaniment:
- Wiener gemischter Satz, Rainer Christ, Jedlersdorf
- Chardonnay Limberg, Stift Altenburg, Weinviertel
- Blaufränkisch Eisenberg Reserve, Weingut Jalits, Badersdorf
- Beerenauslese Cuvee, Gerhard Kracher, Illmitz

All the participants were full of praise for the kitchen and service brigades.

After a congratulatory discourse by Philip Evins, Member of the Conseil Magistral and Bailli Délégué of Great Britain, Janet Evins presented a Bailliage of Great Britain Commemorative Plate as an Award for Excellence.
