The fine art of Thai cuisine
" Yet another successful evening of fine food and great camaraderie "

What better way than to have a “One Night in Bangkok” themed event at the Le Meridien right in the heart of Kota Kinabalu.

Jasvir San-Ghera, fondly known as Chef Mama Duu, is a seasoned Thai cuisine expert with over 30 years’ experience in international hotels. Currently heading the Thai kitchen at JW Marriott, Khao Lak Resort & Spa, Phuket, Thailand, Jasvir was flown in specially to give the Bailliage members and their guests an experience of a lifetime on ‘The fine art of Thai cuisine’.

Using humble ingredients she created an amazing menu well beyond our imagination that satisfied our Thai cravings.

The colours of the Thai flag filled the room at Favola in Le Meridien Kota Kinabalu.
Participants were feted with a delightful amuse-bouche “Ma Hor”, of chicken and pineapple with peanuts, followed by “Ayutthaya-styled Thod Man Goong Yum Som Choon” which is minced prawns with pungent orange salad. This paired so well with a refreshing Chandon Brut Rosé from Australia.

The well-known “Tom Yum Goong” was elevated to a very elegant soup that packed a punch which was cooled down by Cloudy Bay Sauvignon Blanc from New Zealand.

Cleaning the palette was an intriguing mango sorbet with sweet fish sauce (Mamuang Nam Pla Wara).

Next was “Gaeng Kua Pla” – a southern styled red curry with grouper, followed by “Pha Naeng Nue” – Wagyu beef “Pha Naeng” curry which was perfectly partnered by Luis Felipe Edwards Dona Bernarda from Chile’s Colchagua Valley.

Mango sticky rice pudding was aptly the finale.

Such a humble menu at a glance but the courses revealed such finesse. Yet another successful evening of fine food and great camaraderie means that it was an evening that will be long remembered.
