Celebrating the end of the culinary year
" A very warm welcome indeed was extended to Maître Rôtisseur Alain Koenig! "

“Fischerstube” in Weesen is located on Lake Walen (German: Walensee) in eastern Switzerland. For over half a century it has been an emblematic address for lovers of fine fish dining. And long been a Chaîne member establishment.

At the establishment there was a seamless internal succession among Maîtres Rôtisseurs during the spring of 2022. It’s not only a stroke of luck, but also a sign of the strong roots of our organisation and its members in this region of Switzerland.

Two good reasons to celebrate: anticipation of Christmas and welcoming Chef Alain Koenig, former Executive Chef at “Zunfthaus zur Waag” a reputable Zurich Chaîne restaurant and new owner of “Fischerstube”.

Chef Alain’s private and professional roots are in the very east of France in the beautiful culinary hotspot of the Alsace region. His mastery of traditional French kitchen art is exceptional.

Chef Alain combines many years of experience gained from luxury gastronomy in France, Germany and Switzerland with his style of elegant modernity. He is carrying the cosy “Fischerstube” from past into the present safely maintaining the sustainable future of our Chaîne.

A 2017 Crémant d'Alsace provided a sparkling start to the evening. It prepared both palates and eyes for the feast to come: a fish mosaic made of various smoked noble fish, followed by a fine Jerusalem artichoke soup topped with pecan and generously arranged truffle.

The culinary star of the evening was freshly caught sea bass with beurre blanc and caviar, bedded on a traditional mushroom duxelles. For dessert we enjoyed an autumnal porcini vegetable ice cream with a warm chocolate cake.

Bailli Rolf Untersander and Thomas Dolp, our Vice-Conseiller Gastronomique, praised the impeccable performance of the kitchen and service brigades.
