Dining under the stars

The National Bailliage organized a “Dinner under the Stars” together with Hotel Equatorial Catering Services under the baton of Chaîne member Donald Lim, Food & Beverage Director Mr Balam, Chefs and staff at 35 Jalan Langgak Golf courtesy of our Bailli Délégué Datuk Dr Jagjit Singh Sambhi.

46 members and guests attended the function including the Australian High Commissioner, His Excellency Mr Ron Smith and his charming wife. Also present was Ronald Hing, Vice-Conseiller Gastronomique of the Bailliage of Adelaide and his wife, Ivy.

Making a change from the traditional black tie events the dress code for the evening was smart casual attire with Chaîne ribbons. Guests in jovial mood mingled inside and ventured out into the garden which was beautifully lit with flowing fountains. Champagne and canapés were served.

Hotel Equatorial Catering Services produced a splendid buffet with fresh oysters, poached snow crab claws, green mussels, tiger prawns, scallops and salmon. After the shellfish came a carvery of roast prime beef ribs with truffle and brown sauce, roast leg of lamb stuffed with prunes, rosemary and garlic and accompanied by mint sauce. The finale was a popular dessert for Malaysians, namely freshly-prepared crèpe Suzette with vanilla ice cream and also bread and butter pudding.

Accompanying wines were Sileni “Cellar Selection” Sauvignon Blanc from Marlborough in New Zealand and Escudo Rojo Cabernet Sauvignon from Chile. VSOP Cognac and single malt whisky (courtesy of Jag & Margaret Sambhi) were much appreciated digestifs at the end of the dinner.
