The Diamond Ballroom of the luxury Ritz Carlton Hong Kong Hotel was the venue for Bailliage’s spectacular dinner attended by 125 members and guests.
Executive Chef and Chaîne member, Peter Find, with his brigade prepared a unique, exciting gastronomic adventure and epicurean delight.
Before dining everyone enjoyed sparkling Joaquím Arnaud Brut with French “Le Borvo” specially smoked salmon freshly filleted at a dedicated station and accompanied by condiments and salmon lollipops.
Entering the Ballroom, guests were greeted by dramatic lighting and an opulent atmosphere. Adding to the drama, the Marseille bouillabaisse was prepared theatrically in view of the diners. Later, lights were dimmed as magnums were marched in by individually spotlighted staff to the music of “Mission Impossible”.

At the conclusion of dinner, Bailliage Certificates of Appreciation were awarded to Executive Chef Peter Find and the hotel’s staff, Benjamin Raymond (sponsor of Le Borvo Smoked Salmon) and Pedro Lobo of Palatium Fine Wines who sponsored the vinous accompaniment to the courses.
As a special surprise, Lina Lenco Dessert crafted a cake to honour Steven Kahn as the new Chancelier of Hong Kong.
All members and guests delighted in enjoying fantastic foods and wines in an extravagant setting sharing in camaraderie and departed with good tastes in their mouths and memories.
