Dominican Republic Inaugural Chapitre

Bailliage of Dominican Republic
La Romana, September 10, 2016

A National Bailliage on the Caribbean island of Hispaniola is formally inaugurated
" The event culminated with a seven-course dinner "

The National Bailliage celebrated its inauguration at the Casa de Campo Resort Complex in the presence of Alain Taulère, Member of the Conseil Magistral from Costa Rica.

The welcoming remarks were given by Orquidea Dominguez, who immediately presented Bailli Délégué Elect Conrad Bergwerf. He thanked all the members for their support and trust then introduced Inducting Officer Alain Taulère, representing President Atallah, who followed protocol reading the oath in French and carrying out all the rules set worldwide.

Following the Induction Ceremony the evening moved to a cocktail reception at La Piazzetta Restaurant where guests were greeted with Champagne Laurent Perrier 2006. The event culminated with a seven-course dinner. Casa de Campo´s Executive Chef, Anthony Masa Diaz prepared dishes of French haute cuisine, fused with local natural products. Exquisite wine pairings were selected by the Échanson, winemaker Sergio Ottato, in a night full of fellowship and harmony.

It is important to mention that, we believe for the first time in history, a wine from the Dominican Republic (OcoaBay French Colombard) was part of a Chaîne event. This wine was paired masterfully with snapper with mango Béarnaise and roasted leeks.

Other exquisite dishes were cashews cold cream with tomatoes tartare, coffee sablé with organic vanilla, traditional steak tartare with sweet potato chips, beef royale and foie gras with cocoa sauce and mashed yellow yam, smoked chocolate cigar and sesame ash, among others.

Wine pairings:
- Calvet Crémant de Bordeaux Brut
- Nuits-St-Georges, Chanson Père & Fils 2013
- Pouilly Fuissé, Chanson Père & Fils 2014
- Château Cantin, Saint Émilion Grand Cru 2012
- Calvet Sauternes ‘Réserve du Ciron’ 2010
- Ultra Premium Ron Opthimus XO 25 years

The National Council in the Dominican Republic consists of Bailli Délégué Conrad Bergwerf, Chancelier Manabo Yajima, Conseiller Culinaire Luis Ros, Conseiller Gastronomique Gustavo Gomez, Chargé de Missions Manuel Gomez,  Chargé de Presse Arturo Villanueva and Échanson Sergio Ottato.
