Rungthiwa Chummongkhon – or Fae as she is known - was born and raised in Chiang Saen in Northern Thailand. She came to Denmark in 2008 and now lives in Hadsten just outside Aarhus.

Fae admits that she thinks of food 24/7. Whilst training she worked as an Apprentice Chef at Hotel & Brasserie Ferdinand in Aarhus and under Wassim Hallal at Varna and one-star Frederikshøj in Aarhus. She graduated from three-star restaurant The Belle Epoque in Germany.

Before coming to Denmark, Fae owned two restaurants in Thailand. She was also a member of the National Cooking team of Thailand and competed at the Chefs Olympics in Germany where the team won one silver and four gold medals. Her restaurants were lost during the tsunami of 2004.

Her experience in Europe includes several Michelin starred restaurants and in July 2016 she joined Kokkedal Slot Copenhagen as Executive Chef. Kokkedal Slot (English: Kokkedal House) is a former country house located in Hørsholm north of Copenhagen – not to be confused with Kokkedal Slot in North Jutland. The hotel is a member of the Small Luxury Hotels of the World network. It is surrounded by parkland and an 18-hole golf course.

Fae’s culinary style is an elegant combination of fine French cuisine, 'New Nordic' and Thai. Her food is a combination of opposites: new and traditional, western and far east, carefully composed to ensure the main ingredient of each dish remains prominent whilst she adds subtle notes from other cultures and traditions, designed to surprise and titillate without stealing the overall attention.

She uses Thai techniques in traditional French and Scandinavian cuisine - and vice versa - to create original visual and contextual flavours and impressions that are at once innovative and yet familiar to diners.
