Michel Oude Booijink declared the winner

Michel Oude Booijink was declared the winner of the Bailliage’s 2017 National Final of the Jeunes Chefs Rôtisseurs Competition. Under the leadership of SVH Master Chef Michel van Riswijk, Michel works at the Michelin-starred Landhuishotel Bloemenbeek in the village of De Lutte, close to the border between the Netherlands and Germany.

The Runner up was Gert van der Heijden who is employed by the Hotel Landgoed Het Roode Koper in Ermelo working under Chef Dennis van den Beld. This establishment’s kitchen is also awarded a Michelin star.

Five promising young chefs, all working in renowned Dutch restaurants, participated in the National Final held at the Leerhotel het Klooster in Amersfoort. The event was made possible by the generous sponsorship from Sligro, Pabst + Pabst, Rungis, Koppert Cress, Siegert and Hurricane.

The young, highly-motivated participants received the usual “black box” of secret ingredients from which they had to prepare a three-course menu for four people. The first part of the contest consisted of writing the menu, after which 3½ hours were allowed for the preparation of the dishes.

The assessment was two-fold. Firstly, the competitor’s kitchen work was evaluated for cooking technique and use of the “black box” ingredients. Also, efficient work, cleanliness and organization were considered. Dick Middelweerd, Master Chef of De Treeswijkhoeve (Michelin 2-stars) and Joost den Ouden, Head Chef of the host establishment, Leerhotel Het Klooster, evaluated these aspects.

Secondly, an expert jury, comprising of culinary specialist Jolanda van der Jagt, Mario Blom, Cees Dorland and Maarten Matti, then evaluated presentation, originality and taste of the plated clourses.

The prize-giving ceremony after the competition was followed by dinner at the Leerhotel Het Klooster with 57 members and guests participating. Preparation and service was by the students of the Leerhotel.

Winner Michel Oude Booijink will now represent the Netherlands at the International Final in Frankfurt on September 8th.
