Spain Festive Dinner

Bailliage of Spain
Madrid, December 2, 2017

Seasonal friendship and joy at the Hotel Ritz
" Consommé royale with truffle melanosporum was subtle and perfect in its execution "

As elsewhere in the world, the annual Christmas holiday season together with the celebration of the New Year to come represents a special moment for members of the Chaîne in Spain and their families. It is a time full of emotions where joy, love and euphoria reign; a time when unforgettable moments are created with family and friends around a fine table, with a great menu and delightful wines.

For this reason the Bailliage of Madrid organised an outstanding event at the Hotel Ritz to celebrate the achievements of the year that is drawing to a close.

In her welcoming address Bailli Délégué Rosa Román acknowledged the presence of the following personalities:
- Cedric Prieto, Consul General of France in Madrid
- José Manuel Iglesias, President of the World Gastronomy Institute.
- Isabel Mijares, considered to be “the wine lady in Spain”, and her husband
- Andrés Barsumian, a former member of the Bailliage of Venezuela who is now a member in Spain, and his wife
- Manuel Louzada, from Bodegas Pago de Arinzano, sponsors of the sensational wines served with the courses, and his wife.

At the reception, Champagne Mumm from magnums accompanied an excellent ham, hand-cut by a professional that raised our admiration as did the prawns in “raincoats” (batter).

Highlights from the menu deliciously prepared by the hotel’s Executive Chef and his kitchen brigade were as below.

Consommé royale with truffle melanosporum was subtle and perfect in its execution. The recipe for the fillet of grouper on a vegetable crust came from the banquet celebrating the Royal betrothal of King Alfonso XII.

A ‘Kir Royal’ sorbet was served after the fish and before we continued with Beef Wellington. It stood out for the quality of the tenderloin, the crunchy puff pastry, the aromas of generous wine and allspice, and even the elaborate garnish. As a dessert, “passion for chocolate” was offered, along with coffees, infusions and mignardises to complete our delight.

Bailli Délégué Rosa Román and Bailli Provincial Christian Tavelli offered all the attendees a gift of Egoleum Extra Virgin Olive Oil in its black painted bottle with the Chaîne logo applied in gold.

Remembering that it is the season of goodwill, we decided to support the Association Menudos Corazones, which helps families with children with cancer. Attendees brought gifts for these children who will not have the luck to spend Christmas at home so that they would all have a toy with which to play.

After dinner, a DJ enhanced the party atmosphere allowing everyone to finish the night by showing their artistic skills on the dance floor.

Vive la Chaîne!
