United Arab Emirates Dinner

Bailliage of United Arab Emirates
Abu Dhabi, January 27, 2018

Starting the New Year in style
" taking our seats downstairs, we looked forward to a celebration of South American cuisines "

Our first event of the year in Abu Dhabi was held at the recently-opened ToroToro Restaurant at the Jumeirah Etihad Towers.

The brainchild of world-renowned Chef Richard Sandoval, this Latin-themed restaurant is managed by Chaîne member, Maître Hôtelier Turab Saleem, with the kitchen headed up by Chef Eber Villalobos. The restaurant spans two floors on the Marina’s edge.

The evening started with signature cocktails in the upstairs lounge. After which, taking our seats downstairs, we looked forward to a celebration of South American cuisines, including those from Brazil, Peru and Argentina.

Following the “sharing plates” concept we were treated to cold starters of smoked guacamole, tuna tataki, pan de maiz, and ceviche de huachinango, accompanied by Zuccardi Torrontes 2015 from Argentina.

Hot starters of ceviche caliente, beef fillet anticucho and crispy prawns arrived, paired with 2013 Matetic ‘EQ’ Syrah produced in Chile’s San Antonio Valley.

The main courses consisted of pescado del Calao, Wagyu rib-eye steak and steamed asparagus, accompanied by 2015 Matetic Corralillo Carmenere 2015 from the Colchagua Valley in Chile.

Dessert was the spectacular La Bomba. Plastic film was placed on the tables and ‘bombs’ of guanabana mousse, brownie, dulce de leche and tulipe were dropped to explode into a wonderful feast in front of us.

Argentier Dirk Backhaus finished off the evening with a well-deserved appreciation in front of the assembled brigades.
