Memorable evening at the Severin Sea Lodge

The Bailliage hosted its Annual General Meeting and celebratory dinner at the Severin Sea Lodge in Bamburi.

The setting for the AGM was aboard the Imani Dhow which lent a most beautiful atmosphere to the official proceedings of the meeting. The committee welcomed Chef Gurpreet Singh to fill the vacant role of Vice-Conseiller Culinaire.

After the meeting guests were served assorted canapés accompanied by sparkling wine. The setting for the dinner was beautifully laid out in the open air by the swimming pool, with a delightful ocean breeze reviving guests after the heat of the day.

Commencing the menu was pan-seared fillet of parrot fish in white wine and passion cream sauce was served accompanied by a Provincia di Pavia Pinot Grigio. This wine also partnered the second course, a duo of tomato and butternut soup.

Next came chicken roulade on tomato and mango chutney. It was well paired with Brunilde di Menzione Primitivo de Manduria DOC. To cleanse the palate, a beautiful orange and lemon sorbet sprinkled with vodka was presented.

For the main course, we enjoyed jumbo prawns with dill and parsley butter served with steamed rice and grilled vegetables. It was artfully paired with a Moscone Roero DOC 2015.

Dessert was a wonderful coconut parfait served in a dark chocolate basket. To end the evening, espresso coffee and petits fours were served.

Finally, Bailli Aliya D’Silva gave a vote of thanks to the Severin’s General Manager, James Awiti, and presented Chaîne certificates to the Chef, Assistant Food and Beverage Coordinator, as well as to the entire kitchen and service brigades.

Perfectly hosted by the Severin Sea Lodge, it was a most memorable evening enjoyed by all.
