Members and guests were treated to a fantastic dinner at the DaVinci Hotel to celebrate the results of the local Bailliage’s Jeunes Chefs Rôtisseurs Competition.

Chef Sylvester Nair is the son of Chef Luke Nair, Head Chef at the Oyster Box at Umhlanga Rocks near Durban. With a dry sense of humour and a wicked laugh Chef Nair is creating his own legacy in Johannesburg. It was his debut event for the Chaîne.

Attending the Gala Dinner were 38 guests including His Excellency Vincent Karega, Ambassador of Rwanda, Bailli Délégué Philip Mostert and Chargée de Presse Elizabeth Jordaan.

At the awards ceremony, the winner of the Johannesburg Final of the Jeunes Chefs Rôtisseurs Competition was declared to be Yvette de Bruyn of the Hilton Sandton. Runner-up was Terror Lekopa from the Saxon Hotel. Yvette will now compete in the Bailliage of South Africa National Final in February 2018.

Additionally, Bailli Délégué Philip Mostert conducted a welcoming ceremony for Chef Sylvester in advance of his being officially inducted in March 2018.

At the reception, deep fried sushi was enjoyed with Martini Prosecco. Afterwards guests were treated to a beautiful four course dinner.

Commencing the menu was an amuse bouche of cucumber and orange salmon gravadlax served with gin and beetroot jelly paired with Bellingham Homestead Chardonnay.

The second course was lamb fillet infused with cumin and coffee, served with vanilla potato, macaroon, confit carrot puree, candied green peas topped with black truffle pearls and lamb jus, matched perfectly with Bellingham Bernard Series “Small Barrel” SMV.

Next was chicken rolled with streaky bacon, crusted with hazelnuts and served with braised wild mushroom and turmeric broth. It was partnered with Bellingham Homestead Pinotage.

The final course was a beautiful umami-flavoured chocolate sphere accompanied by old-fashioned Tennessee whiskey

It was a beautiful, relaxing evening with friends old and new. Only compliments were heard as guests departed.
