A Master Chef comes calling
" Chef Tom Milligan, Culinary Arts Technical Director of Le Cordon Bleu Australia "

Bailliage members had the rare opportunity to watch a master chef at work. Chef Tom Milligan, Culinary Arts Technical Director of Le Cordon Bleu Australia, was “in town” and The Conrad Bengaluru, the city’s latest luxury hotel, hosted a sold-out masterclass sponsored by Le Cordon Bleu India, long-time partners of the Chaîne.

A respected Chaîne professional member in Australia, Maître Restaurateur Milligan is a much sought-after culinary teacher, team leader and coach. During a long career Chef Tom has been the celebrated Head Chef at numerous five-star hotels and iconic restaurants around the world besides being current President of Australia’s Bocuse d'Or Academy.

Naturally, interest and attendance from the Chaîne’s professional members was high. Chef Milligan, interspersing his talk with precise instructions and a dry wit, fascinated the audience with his culinary skills.

His deceptively simple ratatouille provençale, for instance, was bursting with flavour and a delight to the eyes. The popular Indian street snack, pani puri, was elevated in to a dish of refinement and delight under his tutelage.

After the demo, the group was invited to The Conrad’s terrace and enjoyed a lavish high tea and sparkling cocktails.
