" We paired our wines with the international Malaysian cuisine of Kenny Fong "

East joined West at “The German Code”, our first Beijing Ordre Mondial event of 2019, where we learned to decode wine labels of higher quality levels from Germany’s most fabled vinicultural areas.

We paired our wines with the international Malaysian cuisine of Kenny Fong, Executive Chef of Beijing Hilton’s One East Restaurant.

For those of us who wanted proof that German wines and modern Southeast-Asian cooking really go together, Chef Kenny gave us gustatory reasons to look no further - with splendid results.
 
Starting with a sparkling Sekt made from a citrusy, refreshing Weissburgunder blend, we enjoyed a fragrant trio of amuses-bouche: a bean curd salad, a coffee-char-siew, and a classic chicken-rice dish with ginger-scallion purée and chili.

A mineral-tasting Grosses Gewächs Riesling from the Mosel was a perfect partner for foie gras with cherry, balsamic glaze, and cinnamon-pineapple chutney.

Chef Kenny paired our Erste Lage Silvaner from Franken with his shellfish entrée of fresh-water king prawn laksa, rice noodle, quail egg, lemongrass gravy.

Continuing his culinary journey of Southeast Asia’s venerable kitchens, Chef Kenny presented a poached salmon dish with red quinoa, scallion, ginger, and shallot to go with an unfiltered, single-vineyard Spätburgunder from Baden’s warm and sunny southern region.

He followed it with a main course of beef tenderloin and blue ginger, lime leaf, chili. We enjoyed this meat dish with a dry Lemberger from Württemberg.

For his finale, Chef Kenny brought us to his native Malaysia for a sumptuous dessert of mango sticky rice with coconut and vanilla ice cream. Its wine partner was a single-vineyard, hand-harvested Mosel Riesling Auslese rich in warm luxurious tropical-fruit flavours.

The only phrases we had for Chef Kenny, Angela Li, the kitchen and front-of-house team of One East, the Hilton Beijing’s GM, Stefan Schmidt, and Mövenpick Berlin, our wine supplier, were “Merci! Terima kasih! and Vielen dank!”

Of course, there was one final phrase we said to one another, “Vive la Chaîne!”
