The best of the Netherlands
" An all round wonderful evening! "

After a Belgium-themed dinner in September, for its latest event the Bailliage “moved across the border”.

We were welcomed to the residence of the Ambassador of the Netherlands, His Excellency Frans Potyut, Chevalier d’Honneur, and his charming wife Anita.

Officier Maître Hôtelier Antoine Flouty, General Manager of The Crowne Plaza Hotel, promised us a rendezvous with a contemporary Dutch culinary vision.

Committing to his promise the hotel’s team prepared and served excellent Dutch cuisine.

Guest Chef Alexander Brouver, Executive Chef of the new QO Hotel, a sustainable luxury Hotel in Amsterdam, had flown in specially to oversee the creation of a wonderful menu.

High awareness to organic, fair-trade, animal-friendly, produce respecting the season and using ingredients produced in sustainable manner is key for Chef Alexander.

The table decorations were another piece of culinary art, using fresh young foliage and tulips in lovely compositions.

The highlights of the delicious menu of the Dutch gastronomic experience will make your mouth water for sure.

Watermelon, fermented daikon and soy was our fruit sashimi. Oostershelde yellow tai, oysters and vegetables followed. For many of us it was a first taste of naturally salty sea vegetables.

Cauliflower, walnuts and caviar was next. The caviar was harvested in an animal-friendly way by massaging and milking the caviar out of the sturgeon.

Cod celeriac (roasted for three hours), hazelnut and beurre noisette, then Dutch veal with seasonal butter squash.

Room for dessert? Of course! It was a sugar-coated dome resembling a greenhouse.

An all-round wonderful evening!
