Celebrating in a very different way
" Since joining my Chaîne life has been very fulfilling "

I’ve been living in Macau since 1995 and have a very active civic life including having founded several social associations. It was a logical step that I joined the Chaîne des Rôtisseurs.

This I did in 2014 as a Professionnel du Vin given that I am a partner and General Manager of Palatium Fine Wines, a company based in Macau that only imports Portuguese wines and distributes them in Macau and Hong Kong.

Since joining my Chaîne life has been very fulfilling, not only in respect of the love of wine and fine dining but also the friendship and camaraderie. I’ve visited many Bailliages around the world, especially in China, where I have met many wonderful friends that embody the spirit of the Chaîne.

During our World Chaîne Day celebration at home - a very different way from the normal gathering together for this special day - I hoped to transfer the unique Chaîne spirit to my son as he helped prepare the menu which included:

- Red prawns and mango tartare
- Red prawns wrapped in guanciale*
- Caviar & champagne
