The tradition of the Bailliage’s annual “Premium Dinner” is a concept borrowed from Bailliages in Japan where cost and effort are immaterial to the orchestration of the event. The result is a magnificent dinner that Chefs and the host venue work tirelessly to create. A meal like no other.

Hedonism II is the second restaurant in Hanoi owned by Thiên Linh Trading Company. This prolific wine supplier has been selling wines since 2003. Their aim is to provide the best products to customers while maintaining their credibility with partners. They constantly seek new opportunities to enrich the traditions and culture of the Vietnamese people.

The Hedonism and Hedonism II restaurants derive their names from the ethical theory that pleasure (in the sense of the satisfaction of desires) is the highest good and proper aim of human life. The cuisine is European inspired with a mysterious Asian twist.

For our second Mid-Year Premium Dinner, we invited Maître Rôtisseur Sakal Phoeung, Maître Rôtisseur Nico Ceccomoro and Chef Lê Nhật Linh to honour the traditions of the Chaîne and deliver excellence in cuisine with a unique, collaborative “six hands” five-course dinner.

French Executive Chef, Maître Rôtisseur Sakal Phoeung, has over 25 years of experience in luxury hotels and upscale restaurants. His cuisine reflects a unique blend of creative flair and passion for food. His interpersonal skills make him one of the most-loved chefs in Ho Chi Minh City. A highlight in his career being to have cooked for several State visits.

An Italian chef growing up in traditional Umbrian and Tuscan kitchens, Maître Rôtisseur Nico Ceccomoro has over 14 years of experience having work with starred chefs in renowned, award-winning restaurants. Based in Hanoi where he is Head Chef of Cugini Restaurant, his mission is to enchant surprising his customers with his passion. Leaving them with a desire to discover and remember authentic flavours of Italy without losing the originality of his own cuisine.

In 2018, Lê Nhật Linh became the Executive Chef at Hedonism Wine Cellar after 20+ years working in the world of French fine dining. Including VINE, a restaurant which boasts to have successfully organised the first wine contest in Asia.  And at Don’s Bistro, formerly acknowledged as one of the top 50 best restaurants in Asia. Chef Linh definitely has solid kitchen experience.

The three chefs excitedly rose to the unique challenge to present our members and their guests with the most refined and luxurious dining experience. There were no compromises on ingredients, technique, execution or wine pairings.

We were delighted to welcome members and guests to this very special event. It was outstanding. Definitely high up in the memory stakes.
