USA Induction Dinner

Bailliage of Garden State, United States of America
Whitehouse Station (New Jersey), November 8, 2020

At the historic Ryland Inn
" A special highlight on the menu was salt-baked rockfish "

The Bailliage celebrated its 42nd Gala Induction event at The Ryland Inn. Set in the gentle hills of Whitehouse Station, New Jersey, the 220-year old equestrian estate has been revived by Frank and Jeanne Cretella, owners of Landmark Hospitality.

The Bailliage has a long history of hosting events at the inn going back to the 1970s when the Bailliage was established as Hunterdon-Princeton. Obviously, much has changed since the 40th event almost exactly two years ago. We were fortunate that the weather was unseasonably warm so we could have the doors to the ballroom open and we were all masked and appropriately distanced both during the Induction Ceremony and at dinner.

Chef Christopher Albrecht is a pioneer of the farm-to-table movement. A special highlight on the menu was salt-baked rockfish which was presented in the dining room before being served with wilted Napa cabbage, julienne of French green beans, leek, celery, toasted macadamia nuts, stinging nettle puree (from The Ryland’s own garden), charred onion preserve and charred onion broth poured tableside.

Inductions were performed by Georges Muller, Chancelier Délégué Honoraire of the Academie Brillat-Savarin. He is a founder of the Bailliage and its longest-standing active member. In his introduction, Bailli George Staikos highlighted Georges’ service to the Bailliage over the past 40 plus years.

Naturally, we all hope and pray that the pandemic is soon brought under control, but under the leadership of Bailli Staikos, the Bailliage of Garden State continues to lead in inventive events that are either virtual or safely held in person.
