NUVA offers visitors a getaway from the hustle and bustle of daily life with a combination of dazzling natural scenery and high-end Chinese fine dining.

The restaurant in the AsiaWorld-Expo (AWE) in Hong Kong invites guests to enter a world of contemporary Chinese elegance, under the careful direction of two Chaîne members, Échanson Kenneth Chui and Maître Rôtisseur Toni Mak.

AWE offers an appetising selection of the world’s most splendid cuisines under just one roof. Visitors are spoilt for choice by the range of food and beverages on offer, with over 20 catering outlets strategically located throughout the 70,000 square metre exhibition space.

The name, NUVA, is inspired by the obsolete adjective ‘nubivagant’, literally meaning to wander in the clouds. Located on level 2, the spectacular view - a 360-degree panorama of Lantau Island - suits the name. NUVA offers visitors a getaway from the hustle and bustle of daily life with a combination of dazzling natural scenery and high-end Chinese fine dining.

NUVA’s menu is a celebration of authentic Cantonese cuisine, including signature dishes such as the traditional Shunde delicacy of ‘Golden Chicken’ - baked barbecued pork with thin sliced pork fat and chicken liver. Other signature dishes include Baked Stuffed Crab Shell, Steamed Egg White with Shrimps and Pumpkin Puree and Fried Marinated Whole Abalone with Seasalt.

The restaurant complements its menu of exquisite cuisine with the sensory pleasures of exceptional artworks, presented in collaboration with acclaimed galleries and artists both locally and worldwide. This exclusive showcase is refreshed throughout the year to ensure that the overall dining experience at NUVA always inspires and delights.

The people behind the service
Described as a “dedicated and proud Chaîne member,” General Manager of F&B and Venue Services, Kenneth Chui joined AWE in 2009 and has since led the team to establish new standards of excellence in its catering and venue service, particularly for large-scale events. Perhaps most notably, his management skills enabled AWE to successfully host a record-breaking 360 table banquet. His career resumé includes posts at the Conrad Hong Kong, Ritz-Carlton Hong Kong and Star World Hotel & Casino.

Overseeing the food offer at AWE is Executive Chef Toni Mak. Toni’s 40-year career includes stints at some of Hong Kong and Macau’s most prestigious five-star hotels: Hong Kong Royal Garden Hotel, Macau Studios and Macau Sands Hotel. He has served political and business celebrities from around the world, won numerous awards in culinary competitions and also serves as a judge.
