Celebrating World Chaîne Day
We had an excellent dinner to celebrate World Chaîne Day 2016 here in Brunei.
It was a formal event which 15 members and guests attended at the residence of Pierre Imhof, CEO of Baiduri Bank.
The Brunei Hotel provided predominantly western-style food infused with a sprinkling of Asian flavours. Chef Dian, originally from Indonesia, devised the menu in consultation with Bailli Délégué Andrew Caie.
Amuse-bouches
Mini Provençal skewered beef
Toasted seafood mousse
Tandoori salmon
with cucumber mint salad and seared pita
Clear chicken and tomato broth
with tofu and spring onion
Granny Smith sorbet
with apple cider spirit
Char Siu lamb loin and pan-seared slipper lobster
citrus sabayon, Parisienne potatoes, Savoy cabbage, steamed broccoli floret
Coconut and mango fudge cake
citrus fruit salad, pistachio tuiles
At the end of the evening, the kitchen and service staff members were personally thanked in the traditional way.
A Bailliage commemorative plaque was presented to Allan Diaz, Assistant Food and Beverage Manager, who received the award on behalf of the Brunei Hotel and its staff. The presentation was in recognition of the consistently high quality of service which the Brunei Hotel has provided for several Bailliage events during the past three years.
