Sumptuous celebration of the Chaîne at Villa Caletas
It was at the Hotel Villa Caletas that the Bailliage of San José hosted its second gala induction event for the National Bailliage of Costa Rica.
The event theme “Tropico” was conceived by the Bailli of San Jose, Irina de de Lange, who was inspired by the colours and feel of the magnificent hotel. Set on top of a mountain, it has expansive views of the Pacific and surrounding countryside, although very private and secluded.
The Induction Ceremony and dinner were held in the neo-classical Zephyr Palace. The “Tropico” theme was reflected in the flowers, table names, menu and music. Floral arrangements included pink torch ginger, heliconia, and mano de mono. Tables were labeled Anturio, Cala, Lirio and Heliconia. The menu too was wonderfully tropical.

Croquettes of crab cakes and pejibaye, jumbo shrimp
passion fruit salsa, infusion of nance and fresh shoots
Fillet of corvina with coriander seed crust
Cajun stuffed with chicasquil, fresh palm heart and Bagaces cheese
on creamy seafood rice and coconut milk with tamarind butter and coyote cilantro
Filet mignon with a sauce of natural guava and lemon
served on a yucca croquette, coffee reduction
Tropical fruit sautéed with coconut rum
zapote mouse, fig ice cream
guanabana with cardamom biscuit and citrus zest
“Cardamomo” provided the music, featuring Latin, Middle Eastern, jazz and electric guitar melodies. What a wonderful blend of tropical and world music they played. It was in perfect harmony with the surroundings and the “Tropico” theme. The music was so inspiring that guests rose to dance after dessert was served!
