A Christmas feast to remember
" A fabulous evening under the stars set the mood for the weeks of festivities to come "

There is no better time than Christmas for celebrating the camaraderie which the Chaîne is known for around the world. With this in mind, a grand six-course Gala Dinner was planned for our members at the Shangri-La Hotel.

To start with, the hotel’s new and very skilled Japanese chef, Chef Shimamaura, carved a fresh Atlantic salmon tableside treating us to exquisitely-plated fresh sashimi.

Executive Chef Anurudh Khanna, Maître Rôtisseur, and his team of talented chefs were on hand to ensure every dish of the repast, from the fresh artichoke flan and the white asparagus for the vegetarians, to the roasted butterball turkey with stuffing, the superb grilled lobster, the sea bass ‘en papillote’, the fragrant pork knuckle with bacon, and the juicy suckling lamb went out freshly-plated to each of the 30 diners’ preference.

The festive red, gold and green table settings said Christmas was coming. The edible table décor from mini gingerbread houses to sugar lollipops drew a round of applause.

The wines, selected by Food and Beverage Director Shyam Kumar, included the best of Australia (Lindeman’s Bin 95 Sauvignon Blanc 2016) and Italy (Frescobaldi Chianti Nipozzano Rufina Riserva 2012 and Marchesi di Barolo Barbaresco 2013). All stood up admirably to the varied dishes.

Dessert was plum cake with brandy sauce and red fruit compote served with a homemade honey-and-spice-infused Irish whiskey.
