Bringing the Chaîne to Hanoi once again

This second event introducing the Chaîne des Rôtisseurs to Hanoi, the country’s capital, was a great success. We enjoyed meeting our guests and sampling wonderful food and wines.

It took almost two months to organize, and we wanted it to be a significant landmark in our nascent Bailliage’s journey. In the end, it was this and more. The menu was a wonderful representation of international cuisine and we could not have shared the bounteous table with a better group of people.

We were served freshly baked artisanal bread, Black Pearl oysters, fine charcuterie and Loch Fyne salmon. The pièce de résistance was an incredible 16kg cut of Australian Mulwarra Wagyu beef. Executive Chef Nicolas Plateau passionately prepared the beef which was both a delight for the eyes and the taste buds.

Alongside the beef, guests were able to enjoy the rare Taittinger ‘Collection Arman’ 1981 and ‘Collection Hans Hartang’ 1986. Taittinger was the only champagne served throughout the brunch and each vintage was described in detail to the guests. To finish off in style guests were poured a glass (or two) of the exquisite Taittinger ‘Comtes de Champagne’ Rosé 2005.

An underlying theme of the event was “a vision in white”. Our guests were dressed to impress and they left replete from fine food and wine not to mention joyous memories to retain for many years to come.

We would like to extend special thanks to our sponsor, Red Apron. Rapheal Fauvin enlightened everyone with his extensive knowledge of Taittinger Champagnes served during the course of the event.

Additionally, we could not have achieved such a splendid result without the help and guidance of Derek Charles Gomez, Hotel Director of the InterContinental Landmark72, as well as the Food & Beverage Manager, Jakhongir Khuanazarov. The professionalism shown by everyone in the hotel’s team was second to none.
