Truffles in the spotlight

The Bailliage began its 2018 events at Sorges in the Périgord with a truffle-themed event.
Twenty members and their guests gathered at the famous Auberge de la Truffe. Located in the world capital of the truffle, the hotel is classified 3 “stars” and 3 “chimneys” by the Logis du Périgord and its restaurant has a 3 “casseroles” rating. The recipe reserved for the customers of the establishment remains: a generous reception, a warm comfort, and authentic cuisine.
This famous hotel/restaurant now under the ownership of Mr and Mrs Nottelet feasted our taste buds thanks to cooking skills of Chef Pierre Corre, Maître Rôtisseur, and by a choice of wines perfectly adapted to the various dishes.
A “mushroom” blessed by the gods is at the heart of the art of living, the truffle is a centrepiece of a whole gastronomic tradition and the object of a passion! It is this passion that Pierre Corre likes to share with his guests by cooking authentic recipes with rich local flavours.
After the champagne reception, as a memory here are the four mouth-watering dishes conceived by the Chef for our delectation:

These dishes were accompanied by a dry Bergerac Blanc, Château Tour des Gendres ‘Cuvée Moulin des Dames’ 2015 and a Condrieu 2014 from Nicolas Perrin.
