An evening of perfection
" a splendid menu of Belgium's delicacies "

Our new dining season started after the summer break with a fresh, superb dinner at the residence of the Ambassador of Belgium, His Excellency Piet Heirbaut, Chevalier d’Honneur.

Ambassador Heirbaut and his wife Royce warmly welcomed us with the Belgian group “Crossbones” performing live.

For the occasion the Crowne Plaza Hotel Chef Mario Baruffi and Chef Eddy Govaert, who came especially from Belgium, created a splendid menu of Belgium's delicacies.

We were seated at tables with masterpiece creations of chocolate, an incomparable Belgian domain, showcasing prominent city landmarks. Lucky to be seated at the table of “Bruges”, a UNESCO World Heritage city, I could admire all the detail of the Belfry medieval bell tower exquisitely reproduced in chocolate.

‘Bruschettini’ with Zeebrugge grey shrimp
basil-flavoured tomatoes, chive mayonnaise

Pan-seared quail breast, braised quail leg, malt gravy
sweetbread coated white and black sesame seeds
spring onion flavoured Parmesan tuiles
crispy leek, celery root cream

Baked sea bass ‘Ostend’ style
mussels, prawns, seaweed
white butter sauce using a prawns and mussels reduction

Slow-cooked ‘Belgium’ short ribs
glazed endives, Shimeji mushrooms, shallots
Dauphine potatoes, gravy, ‘Tierentyn’ mustard sauce

Chocolate fondant ‘moelleux’
pecan nuts, homemade vanilla ice cream
kumquats, chocolate crumbles

Belgian pralines
Cuberdons (cone-shaped Belgian candy)

Another masterpiece, our menu consisted of famous Belgian dishes and original conceptions. From shrimps to quail, sea bass and mussels, then short ribs, with the chocolate fondant completing a dinner of sheer perfection.

Delights of the palate, live music entertainment and camaraderie, we enjoyed a wonderful culinary Chaîne dinner.
