A taste of Mexico
" We really enjoyed and appreciated this evening full of truly Mexican blasts of aroma, sounds and colours "

The Bailliage held a dinner at the residence of His Excellency the Ambassador of Mexico, Chevalier d’Honneur Miguel Angel Isidro and his wife Patricia.

“A taste of Mexico” was the theme of the evening, in cooperation with the Ambassador and the team from the Jumeirah Messilah Beach Hotel & Spa. A Mexican chef, Mariachi musicians and all the genuine spices were flown in for this authentic event ensuring it was full of culinary culture.

Starting with “Infladita” (wild mushrooms, goat’s cheese, hominy corn, charred jalapeno and avocado puree) our second dish was “Tamales de Pipían” (steamed corn dough wrapped in banana leaf, braised chicken, green mole sauce, charred corn, and Poblano pepper).

The fish course (“Pescado a la veracruzana”) comprised poached sea bass, cherry tomatoes, capers, green olives, fried plantain, after which our palates were refreshed by “nieve de flor de Jamaica” (hibiscus sorbet).

For the main dish we were regaled with “Costilla de Res con Mole Negro de Oaxaca Y Nopales” - a 12 hours-braised short rib with Oaxaca black mole sauce. This very special time-and-labour-intensive dish was a highlight in itself given over 25 ingredients and most importantly the Mexican chocolate and the chillies only to be found in Oaxaca!

The menu concluded with the sweet taste of “Buñuelos” - Mexican fritters, cinnamon rice ice cream, peanut Piloncillo, and a live performance of “Crepas con Cajeta” - flambéed Mexican pancakes with caramelized goat’s milk.

We really enjoyed and appreciated this evening full of truly Mexican blasts of aroma, sounds and colours, represented in the beautiful details of the set-up and the authentic presentation.
