At Holmenkollen, our new Chaîne member restaurant

Holmenkollen, our new Chaîne member restaurant, invited the Bailliage to dine in beautiful surroundings overlooking Oslo city centre by night.

There were 48 guests. We were honoured by the presence of Carl Wachtmeister who is a Member of the Conseil d’Administration and Bailli Délégué of Sweden.

Executive Chef Anders Ellburg and his brigade prepared a magnificent menu for the evening. The wines were selected by Head Sommelier Nina Ellburg together with the wine importer Victoria Brandvold and Roxy Wines. Special guest for the evening was Giuseppe Volpato presenting his lovely organic Franciacorta Rosé from the winery Elisabetta Abrami.
 
Before going to the table, we were served a delicious amuse bouche of lobster and salmon roe together with a glass of Elisabetta Abrami Franciacorta Biologico Rosé introduced by Guiseppe Volpato himself during which he explained about the winery.

The menu was created around the wines from the excellent Barolo producer Aurelio Settimo.

The food and wines matched perfectly. For each course Victoria Brandvold introduced the accompanying wine with Chef Ellburg explaining the dishes.

The whole evening was very well received by our members. The excellent service from the service brigade which enhanced the food meant we all had a most enjoyable, wonderful evening in a beautiful atmosphere.
