A masterpiece!
" Members were treated to a remarkable menu "

The Chaîne’s Bailliage of Luxembourg was created in 1969. The Grand Chapitre celebrating our 50th anniversary had to be cancelled in 2020 due to COVID-19. To catch up with the overdue inductions and promotions, a Chapitre was organised at the beginning of July this year at Le Cercle Münster in Grund in the old town in Luxembourg City.

Francis Sandt, Bailli Délégué of Luxembourg and a Member of the Conseil Magistral, was delegated by President Yam Atallah to act as Inducting Officer. He welcomed the guest of honour, Bailli Honoraire Ulli Schroeder, representing the neighbouring Bailliage of Germany.

Thirty members were inducted or promoted. Notable among the awards were the Grand Commandeur insignia (40 years) presented to Mr Stoffel and Mr Ruffel; the Officier Commandeur insignia (30 years) presented to Mrs Backes-Wiget, Mr Cannivé and Mr Reding; and the Commandeur insignia (20 years) presented to Mrs Anen-Heymanns and professional members Mr Mougenot and Mr Adrovic.

After this solemn event, cocktails were served to the inducted or promoted members, as well as to visitors from the neighbouring Bailliages of Germany and France.

These were followed by a five-course Gala Dinner. Members were treated to a remarkable menu, consisting of a starter of flambéed line-caught mackerel, grilled Noa cucumber with mint and sorrel fromage blanc, followed by seared smoked bluefin tuna with a heritage tomato, green apple and horseradish relish. The main course was a Salers beef fillet and oxtail ravioli served with crispy roast potatoes and pepper jus. This was followed by a selection of both young and mature cheeses, and finally, a dessert featuring an apricot sphere with Sablé Breton biscuit shards and lavender-infused custard.

Tea, coffee and petits fours rounded off this masterpiece.

The evening was organised by the former General Manager of Le Cercle Münster, Maximilian Von Hochberg, Maître Rôtisseur de la Chaîne. At the end of this magnificent event Bailli Délégué Francis Sandt was keen to thank the kitchen and service brigades for their excellent performance.

Some of the revenue from the evening was donated to the Chaîne des Rôtisseurs’s charitable association (ACCR).
