Excellence in Piaf at the Grand Velas Riviera Maya
" Exquisite touches of table settings, flowers, music made the perfect combination "

Our penultimate event of the year was a Chapitre held with great success. We were graced with the presence of Bailli Délegué Thierry Blouet, who is a Member of the Conseil Magistral, and our host Rodolfo González Munguía who was praised for his contribution.

During the Induction Ceremony, retiring Baillis Nestor Ospina from Playa del Carmen and Francisco Morales from Cozumel were thanked for their extraordinary participation at the head of their Bailliages in times as difficult as the pandemic and how they managed to keep their members united. Also, members of three Bailliages were inducted: Cancún, Playa del Carmen and Cozumel.

After cocktails and the toast, diners were invited to the Piaf restaurant lounge where exquisite touches of table settings, flowers, music created the perfect atmosphere.

The dinner was led by Chef Mario Lopez together with Mario Soto and Nahúm Velasco and Sommelier Manuel Silva.

To start: we were pampered with a fine coconut, ginger and smoked eel tartlet, accompanied by Champagne Piper Heidsieck Brut.

Continuing: kidneys, tripe, lemon grass and vanilla, carrot and yuzu.

Next: Chefs presented mushrooms in oriental broth, bergamot and almonds with Asian leaf tempura served with Château Montelena Chardonnay, Napa Valley, USA.

A delicious striped bass, poultry juice and kaffir lime, accompanied again by Château Montelena Chardonnay.

Star dish of the night: lacquered duck magret with orange teriyaki, yellow lemon puree and miso sauce paired with a Hacienda de Encinillas Bordeaux-style blend from Mexico.

After such an excellent series of courses, raclette cheese and aged cotija cheese were served.

Dessert: white chocolate, guavas and passion fruit, served with a Martin Pasler Beerenauslese Goldburger/Neuburger/Welschriesling from Austria.
