The realization of the Grand Chapitre of France was a great adventure, made possible thanks to the precious involvement of each of the participants.

Day 1
During our recent escapade in Cathar country, we had the opportunity to discover the rich history and beauty of this sunny region of southern France. For the bravest among us, the trip began with a visit to the Château de Lastours, a group of four castles perched on a hillside with breathtaking views. It was like being in a knight movie! We admired the ruins, imagining the stories that unfolded there.

In the evening, we were welcomed at the Lycée Charlemagne, anchored at the foot of the medieval city. Dinner was under the direction of Maître Rôtisseur Michael Humbert.

Day 2
The second day of our trip took us to Castelnaudary. Castelnaudary, a small town nestled on the banks of the Canal du Midi, is famous for its rich cultural heritage, medieval architecture and, of course, its love of cassoulet. It's THE cassoulet capital of the world.

We began with a visit to a cassole factory [Ed. A cassole is a conical earthenware container, glazed inside], discovering the ancestral art of pottery. Next, a visit to the cassoulet factory revealed the secrets of this delicious regional speciality. The visit ended with our induction into the Confrérie du Cassoulet de Castelnaudary, an honour we cherished, followed by a lunch around .... cassoulet.

In the evening, a sumptuous dinner at Château de Villerambert prepared by Michelin-starred Chef Stephan Proche crowned this unforgettable experience.

Day 3
Our third day in Occitan country was an unforgettable experience. We began the day with a visit to Fontfroide Abbey, a place of serenity and architectural beauty. The peaceful gardens and history of the abbey captured our imaginations.

After the visit, we headed to Gruissan for a memorable lunch. The fresh oysters and coastal setting were a real treat for our taste buds and eyes. Gruissan felt like a well-deserved break near the salt marshes. We all wanted to extend our stay there.

The historic town of Narbonne was our next stop, where we explored the Gothic cathedral and strolled along the Canal de la Robine, discovering the soul of the city.

Finally, the day came to a spectacular close with dinner at Les Grands Buffets de Narbonne. This renowned restaurant offered an exceptional culinary experience with a variety of delicious dishes, from seafood to cheeses and exquisite desserts, under the guidance of owner Louis Privat, Vice-Conseiller Gastronomique of the Bailliage of Occitanie.

Day 4
A studious morning for the French members, most of whom were at the Annual General Meeting, while our foreign guests visited Carcassonne. The medieval city is a real gem, with its impressive ramparts and cobbled streets. Some were even lucky enough to sample a delicious local ice cream as they wandered through the narrow streets.

In the evening, we gathered at Château Pennautier for the Chaîne des Rôtisseurs inductions and promotions, as well as the Comte de Monte-Cristo Cigar Club inductions, followed by a Gala Dinner orchestrated by Chef Franck Putelat, Meilleur Ouvrier de France and double Michelin-starred chef.

The inductions were officiated by:
- Laurent Poultier du Mesnil, Member of the Conseil Magistral, Bailli Délégué of France
- Daniel Jäggi, Member of the Conseil Magistral, Bailli Délégué Honoraire of Liechtenstein
- Gérard Canarie, Bailli Délégué of the Principality of Monaco.

Day 5
A bourride was served in Gruissan. [Ed. Bourride is a culinary speciality traditional to the cuisine of Provence and Languedoc, based on fish, seafood and vegetables, served with aïoli and olive oil.]

Conclusion
The Cathar country was an unforgettable discovery. Between history, culture and relaxation, this region fulfilled all our expectations. If you're looking for the perfect mix of history and leisure, the region is definitely a destination to consider.
