The first Chaîne event in Guangzhou was with the world-renowned Chef Jeff Ramsey. An American-Japanese he earned his first star Michelin star when he was just 32 whilst at the Tapas Molecular Bar of the Mandarin Oriental in Tokyo. An excellent foundation in Japanese cuisine, plus the influence of Chef José Andrés, resulted in Chef Ramsey creating his own “Japas” (Japanese tapas) modernist cuisine!

As our guest chef, Ramsey enhanced his menu with quality local ingredients. He utilized the famous “lao gan ma” chili sauce from China, incorporating it into a Japanese-themed potato salad with smoked tuna belly. A new dish created for our event!

As he would say, taste “trumps” it all.  Letting the high quality of the ingredients shine is the key. Ramsey’s cuisine demonstrates this from his Japanese cuisine minimalist background. His strong passion for creating and his goal of establishing the bridge of emotional connection between his flavours and customers result in culinary art.

The event was set up “Kappo” style where the chef serves a maximum 12 guests seated around a counter to ensure full attention is paid to the cuisine as well as facilitating interaction amongst guests. The menu is prepared and executed up close and personal, with Chef explaining and sharing his creations.

Jeff Ramsay’s gastronomic playground is combining different flavours and ingredients whilst creating unusual textures for the palate. Furthermore, the menu was paired with a most interesting selection of beverages and drinks thus magnifying our experience of his passionate journey of taste.
