Dancing the night away at the Capella Resort
" This year was the first time that dancing had been incorporated in the programme for the gala dinner "

The luxury Capella Singapore Resort and Spa on Sentosa Island was the well-chosen location for our annual gala induction event.

The Induction Ceremony was presided over by our own Bailli Délégué Honoraire, Dr Ted Lee, in his capacity as a Member of the Conseil Magistral. Naturally it was carried out with due pomp and pageantry. Thirty-two members were inducted, promoted or presented with awards.

After the formalities, members and guests gathered for champagne and canapés before being ushered into the ballroom for dinner by the irresistible sounds of a four-piece band. This year was the first time that dancing had been incorporated in the programme for the gala dinner. As a result, during the evening it became evident that many members had brushed up their dancing skills beforehand!

The dinner, attended by more than 130 members and guests, commenced after a warm welcome address by Bailli Délégué Yeo See Kiat. Innovative Executive Chef David Senia and his team presented the delectable seven-course dinner. Wines from the Bailliage’s famed cellar were aptly paired by our wine committee:

2007 Puligny-Montrachet ‘les Clavoillon’ - Domaine Leflaive
2005 Corton Maréchaudes - Domaine Chandon de Briailles
2003 Château Pichon Longueville Comtesse de Lalande - 2nd Growth Pauillac
2007 Château Climens - Premier Cru Classé Sauternes
1985 Taylor’s Vintage Port

Immediately after the Bailli Délégué’s welcome address, some members took to the dance floor even before the first course was served! Members and guests fully took advantage of the time between each course to let their hair down.

A short video was shown of the Singapore National Culinary Team which won the gold medal at the Ika Hoga Culinary Olympics in 2016. The President of the Singapore Chefs Association, Edmund Toh, and Team Manager, Louis Tay, who are Chaîne members, were given a big round of applause for their achievement.

Awards were also presented to the three Best Dishes and the Best Event of the Year. The Caramel Apple Tart dessert, which was one of the courses presented at the Culinary Olympics, garnered the highest rating and deservedly received the Best Dish of the Year Award. The Culinary Olympics Champion Dinner captured the Best Event of the Year Award.

It was a magical evening for new and old members alike. The evening ended on the hopeful note that dancing would be a regular feature at future Chapitre events.
