Spellbound even speechless

To commemorate World Chaîne Day, the Bailliage celebrated with a lavish feast at Singapore’s only Michelin 3-star establishment, Restaurant Joël Robuchon at the Resorts World Sentosa complex.

Fifty members and their guests sat down to enjoy a gastronomic experience befitting the jewel in our calendar.

Chef Kim Joinié-Maurin and his team orchestrated a meal that left us spellbound even speechless. The skills of this Chef belied his youth leaving no doubt that Joël Robuchon was justified in trusting the 36-year old to helm this restaurant.

Among the dishes served were Imperial caviar and king crab refreshed with crustacean jelly and light cauliflower cream, as well as Châteaubriand Rossini-style with foie gras, potato soufflés and Port wine reduction.

“Perroquet” mango lightness flavoured with lychee and passion fruit with fizzy crumble was a dessert nearly too beautiful to eat.

Wines from the Bailliage’s famous cellar included:
- 2003 Champagne Dom Pérignon
- 2005 Corton Grand Cru ‘Maréchaudes’ from Domaine Chandon de Briailles
- 2005 Jean Noel Gagnard Chassagne-Montrachet 1er Cru ‘La Boudriotte’
- 1999 Château Cheval Blanc, Saint-Émilion Premier Grand Cru Classé (A)

At the end of the dinner, we emphatically showed our appreciation to the culinary team led by Chef Kim and to the service brigade led by Sebastien Noyelle and Jasmine Wu. Together they provided an experience that would not be easily forgotten.
