First ever national final

The Bailliage of Malta is expanding its horizons!

Not only did Malta successfully inaugurate an Ordre Mondial des Gourmets Dégustateurs (OMGD) section in 2016 but the Bailliage also organised for the first time a National Jeunes Chefs Rôtisseurs competition.

Much time was spent by Chargé de Missions Ian Collins and his committee to ensure that the competition was held within the regulations, spirit and high standards of the Chaîne’s long-standing, renowned international competition.

Ten competitors (two young women, eight young men) from leading hotels and restaurants competed in the event held in November 2016 at the Institute of Tourism Studies – the state college for the hospitality and catering industry in Pembroke, St Julians.

The competition started with a briefing after which the young chefs had 10 minutes to set up their station. In the “black box” – the traditional mystery basket of ingredients – were mandatory ingredients of fresh white shrimps and whole quail.

Judges included Conseiller Culinaire Marc Besancon, noted culinary author Frances Bissell and Michelin-starred Chef Davide Pezzuto from D.One in Montepagano, Italy. At the end of the competition the judges complimented the young chefs for the quality dishes they had presented in the restricted time as well as providing valuable feedback.

The winners were announced at a special black tie awards ceremony and dinner a month later. In the presence of a large number of Bailliage members and their guests, together with the judges and the sponsors, Gabriel Caruana from the Hilton Hotel was announced as the winner. The Runner’s up medal went to Brady Dalli from the InterContinental Hotel and in Third Place was Reuben Borg from the Corinthia Hotel Attard.

Such competitions rely on the expertise and dedication of the kitchen and tasting judges, all of whom were professional chefs. A big thank you went to them, as well as to the sponsors and the Bailliage volunteers who assisted so ably on the day.

Encouraged by this successful first competition the next one is already being planned.
